
Black Beans Recipe

Serves 6 to 8
Ingredients:
3 (15-ounce) cans black beans, drained
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1/4 cup olive oil
14-ounce can chopped tomatoes
1 1/2 cups water
8-ounce can tomato sauce
1 tablespoon red-wine vinegar
1 teaspoon sugar
1 teaspoon pepper
1/2 teaspoon salt
Rinse beans and drain. Saute onion, garlic and green pepper in oil. Add beans, tomatoes, water, tomato sauce, vinegar, sugar, pepper and salt and bring to a boil. Cover and reduce heat to low. Simmer 1 hour. Remove lid and simmer an additional 20 minutes, stirring occasionally. Serve over rice.
