Yields 18 hush puppies
Ingredients:
1 1/2 cups yellow cornmeal
1/4 cup self-rising flour
1 1/2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup chopped onion
2 tablespoons chopped fresh parsley
2 cups skim milk
1 egg white, lightly beaten
1/2 cup water
Preheat oven to 400 degrees. Lightly coat an 18-cup muffin pan with nonstick cooking spray. Mix cornmeal, flour, baking powder, sugar and salt. Fold in onion, parsley, milk, egg white and water. Pour batter into prepared muffin pan, filling each 3/4 full. Bake 20 to 25 minutes or until brown.
