Serves 6.
Ingredients:
6 boneless, skinless chicken breasts
Garlic powder to taste
1/4 cup olive oil
1 family-size can cream of mushroom soup (26 ounces)
1/2 cup low-fat milk
2 tablespoons lemon juice
2 tablespoons dried basil
Preheat oven to 350 degrees. Season both sides of chicken with garlic powder. Heat skillet and add olive oil. Saute chicken until lightly browned on both sides. Add remaining ingredients to an ovenproof dish and stir well. Add chicken, cover and bake for 1 1/2 hours.
Nutritional analysis per serving: 345 calories, 20 grams fat, 72 grams carbohydrates, 29 grams protein, 68 milligrams cholesterol, 1,080 milligrams sodium, 52 percent of calories from fat.
